Lady Amarilla is an early maturing, deep-yellow fleshed processing variety for fry and chip production. This variety has excellent storage capabilities which allow it to be stored for extended periods of time without compromising frying quality. Lady Amarilla has also been used for organic applications and it has some heat and drought tolerance.
